Wow, this past Sunday was a big one. As usual, a trusty loyal band of dedicated volunteers arrived to make this delicious and healthy meal come together beautifully. And it certainly was gorgeous when it came together. The sandwich was half tuna salad and half chicken salad. There was a delicious corn, bean and veggie salad, and another side of very sweet and cool watermelon. There was also a delicious dessert of Jo's famous cookies and some pudding. We also had fresh lemonade and ice tea prepared for distribution. Luckily, there was a bit of the watermelon left over at the end, so I can attest with certainty that the watermelon tasted as good as it looks in this photo above! It's no surprise that I am a big fan of the veggies and fruits that are always served with meals at these Sunday meals. Look at how colorful this salad looks. There were three different shades of bell peppers in here, beans, celery, onions, green onions and corn. The perfect dish for summer. Like I mentioned in my last post, sometimes it's nice to have a delicious sandwich for dinner instead of a heavy hot meal during the summer. This past Sunday was a celebration of Pentecost, and I think it really suited the energy and spirit aflame that day. In a time, when there is so much sorrow, pain and anger in the air over the murder of George Floyd, it was really nice to come in and do something to bring some light into this world.

Sometimes during the summer people would be happy with a delicious sandwich with healthy sides for dinner instead of a heavy hot dish. This dinner was another wonderful wholesome dinner that our loyal volunteers packed and dispersed last Sunday. The sandwich was accompanied by a gorgeous fresh salad (below) and watermelon and of course chips and a cookie for dessert. The crew puts a lot of time into planning meals out ahead of time. At this meal we had volunteers with a table with hygiene kits as well, which is very helpful during this trying time of COVID-19 where many of the restrooms which are usually opened to the public, are no longer available. We really could not do this each week without all of the donors who dedicate their time, their food, their talent and items to bring this together each week.
